Crock pot beef dip sandwiches takes my favorite sandwich and makes it so easy that I'm a bit apprehensive. It's TOO easy. It's too tempting to feed this to my family when I feel lazy. Which is like, every day.

Crockpot beef dip sandwiches takes my favorite sandwich and makes it so easy that I'm a bit apprehensive. It's TOO easy. It's too tempting to feed this to my family when I feel lazy. Which is like, every day.

In all seriousness, this has officially entered the rotation for DAYS WHEN LIFE IS CRAZY. Which again, is every day lately.

FOUR ingredients, folks, and your delicious dinner is done! I even included the buns, which technically are not really an ingredient. So maybe this is a mere three ingredient recipe? It also is better the longer it cooks, so days when you are late it's totally ok. This meal is waiting for you and your family!

**This is also a two-fer recipe. I have another recipe coming that uses the leftovers from this roast! **

This beauty has the au jus already done for you. It simmers all day in the crockpot, getting better and better as the roast cooks and as time passes by.

Once you get home and that luscious roast has cooked all day, you are going to then slice it up – against the grain, as you can see in my photos- nice and thinly.

Then you simply place it in a bun, pour the already done au jus into a bowl and dip away!

Yup.

These crockpot beef dips officially have the kid seal of approval, which means that there was no arguing about dinner.

Sure,  his sister ate the beef plain and the bun plain, but really, she's just deconstructing it, like all those fancy chefs do. (This is a lie that parents of picky eaters tell themselves. Daily. With a glass of wine to wash the bitter taste of our lies down.)

Now you CAN top these with a nice melty cheese, or some onions as well, but this is just your basic beef dip on a lovely crusty bun. Remember you want a bun that's slightly crusty so it doesn't fall apart on you while dipping!

So what do you pile on your beep dips? When I have time, mushrooms, cheese and onion are my favorites!

  • one 3 pounds beef blade/chuck roast
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons oil
  • 4 cups of beef broth
  • 2 tablespoons onion soup mix
  • 4-6 crusty sub/Hoagie buns
  • 2-3 tablespoons butter
  • Swiss or provolone Cheese

Slow Cooker Instructions

  • Place the beef broth and dry onion soup mix into a large crock pot, stir until combined. Season the roast beef with the pepper and the garlic. Place the oil in a large skillet over medium-high heat, then sear the roast on all sides, then place the beef roast into the liquid in the slow cooker.

  • Cover and cook on low for 6-8 hours or high for 3-4 hours until the meat is fork-tender. Remove the roast from the crock pot and slice into thin slices or shred. If you are shredding the beef it is best to leave some liquid with it to ensure it stays moist and delicious!

  • Preheat your oven to 350 °. Spread the butter on the sub/hoagie buns, stuff the meat and cheese slices into the rolls and place on a baking sheet.. Toast the sandwiches for 5 minutes or until the cheese starts to melt.

  • If desired, strain the liquid in the slow cooker though a sieve into a bowl, then ladle the liquid (au jus) into bowls large enough for dipping for when you are serving.

Instant Pot Instructions

  • Press the saute button and place the oil into the bottom pot of the Instant Pot. Season the roast beef with the pepper and the garlic..Sear the roast on all sides, then turn off the saute button.

  • Add the broth and the onion soup mix to the pot. Place the lid on to of the Instant Pot and seal according to manufacturers directions. Cook the roast on high pressure/manual for 60 minutes.

  • Let the pot naturally release for 10 minutes, then manually release according to manufacturers directions.

  • Remove the roast from the pressure cooker and slice into thin slices or shred. If you are shredding the beef it is best to leave some liquid with it to ensure it stays moist and delicious!
